"Dashi" (Japanese broth or soup stock), the source of "Umami(tastiness)", is the most decisive factor to make good Japanese foods. Its health benefits have been noticed by many studies, too.
There are two main ingredients with Japanese Dashi. Dried fish and a kind of seaweed, Kelp. Traditionally, Katsuo (Bonito) or Sardine have been used for fish-based Dashi. Especially Katsuo-bushi (Dried bonito) produces very sweet and subtle flavor by which Japanese Noodle Restaurants/Bars always attract the passengers on the streets. Konbu (Kelp) is the rich source of Alginic Acid, the natural emulcifier that has amazing detox effect. Especially Hokkaido Konbu is known for its excellent quality. This Dashi developed by qualified Dashi Sommelier, Mr. Kazumoto Momoi, is made only by best quality Katuso-bushi and Hokkaido Konbu with no additive.
1 sachet contains 200g of Dashi that can produce 60 - 70 bowls of Miso Soup, 60 bowls of Cold Udon/Soba or 40 bowls of Hot Udon/Soba. Retail packs are available.
Another Konbu (Kelp) only Dashi is also available.
