This is Tosa Binchotan Charcoal. Its grade is Tokuwari.
Tosa binchotan charcoal is produced by cutting and kilning quality oak, called Ubame oak, grown for years to become extremely dense and hard. Because the raw timber is burned over 1,000 degrees celsius for about 10 days, impurities containing volatile components are almost eliminated, which leads to less emission of smoke from the white charcoal.
When the charcoal is burned, it gives off far-infrared rays, which reach deep into ingredients, grilling the outside crispy without dropping out the juice inside, enhancing umani flavor that they originally have.
During combustion, the binchotan keeps firepower stable and provides long burning time, so that contributes to easy cooking.
