AMULYN Food Grade Emulsifier E322 Soybean Soy Lecithin Powder 95%
Soy lecithin is extracted from the by-products of soybean oil production. It is esters composed of glycerol, fatty acids, choline or cholamine. They are soluble in oil and non-polar solvents.
The composition of soybean lecithin is complex, mainly containing lecithin (about 34.2%), cephalin (about 19.7%), inositol phospholipids (about 16.0%), phosphatidyl serine (about 15.8%), phosphatidylic acid (about 3.6%) and other phospholipids (about 10.7%).
The product is light brown to light yellow powder, and through the optimization of the process, water soluble phospholipid powder can also be produced. lecithin can be extracted not only from soybeans, but also from sunflower seeds and egg yolks.
