We call bonito flake shavers “bonito boxes.”
This is an original product we have been manufacturing since the Showa era.
Professional bonito flake shaver with a blade of Aogami steel also used for kitchen knives
This pro-level bonito flake shaver has an outer box made from Japanese ash wood, with a plane block made from oak.
The professional version does not have a drawer.
The lack of a drawer makes it possible to uses a heavier blade that holds a lasting edge and is also wear-resistant, allowing you to shave even dried bonito until the box is full.
It also has non-slip pads on the bottom.
We highly recommend sprinkling using the powdered bonito left over from shaving as a flavor enhancer sprinkled on tempura and steamed rice or added to miso soup!
Extra-thin shavings make a great pairing with tofu and greens boiled in soy sauce! We also strongly recommend adding it to steamed rice topped with a raw egg.
By the way, adding bonito flakes to curry just before eating is also super delicious!

The High Type uses a high-grade Aogami steel shaver blade made by craftsmen in Yoita, Niigata Prefecture.
We are very pleased to say that these shaver blades are also used by Kiyama, a Michelin-starred restaurant in Kyoto.
