Carrot seed oil is an essential oil extracted from the seeds of the carrot plant Daucus carota. The oil has a woody, earthy sweetness and is yellow or amber to light orange-brown in appearance. The pharmacologically active components of carrot seed extract are three flavonoids: luteolin, luteolin 3' -O-β-D-glucopyranoside and luteolin 4' -o-β-D-glucopyranoside. Distilled oil is not an extract, but is used for fragrances and aromatization of foods
