Wine fermentation tank
The main feature of wine fermentation is maceration fermentation. That is to say, during the fermentation process of wine, alcohol fermentation and solid matter maceration exist at the same time. The former converts sugar into alcohol, and the latter dissolves tannins, pigments and other phenolic substances in the solid matter into the wine. The process of wine fermentation includes: destemming and crushing, grape-vibrating screening table to remove impurities and small green grains, mobile lifting rack, destemming and crushing machine to remove and crush fruit stems, juice collection tank and pulp pump to collect and transport the crushed pulp. To the fermentation tank: Pump the grapes into the fermentation tank immediately after crushing and destemming, and add SO2 while filling the tank. After filling, perform a backflow to evenly mix the SO2 with the fermentation substrate: put the proportion of dry yeast into warm water to reconstitute. The water is made into yeast emulsion, which can be added to the ingredients for fermentation; finally, when the specific gravity of the wine is measured to drop to a certain index, the skins and dregs are separated.
Usually, grape fermentation liquid basically includes grape juice, grape skins, grape seeds and a small or trace amount of grape stems. During the fermentation process of existing wine fermentation tanks, the grape skins will gradually float to the top of the fermentation liquid. As time goes on, part of the skin will exceed the liquid level and cannot come into contact with the fermentation liquid. If the grape skins are not in contact with the liquid for a long time, This part of the cortex will be consolidated. The consolidated cortex will easily prevent the coloring components and polyphenols in the grape skin from being integrated into the wine, which will affect the quality of the wine to a certain extent.
