Wheat gluten, also known as active gluten powder, is a powder product made by separating, extracting and drying the protein in wheat flour. It is a nutrient-rich active protein composed of a variety of amino acids. It has strong water absorption, viscoelasticity, adhesion, thermosetting and liposuction. It smells light and mellow, with a grain taste. It is the raw material for making gluten. It has a protein content of more than 80% and a relatively complete amino acid composition.It is a nutrient-rich, inexpensive plant-based protein source. Gluten is mainly composed of gliadin with small molecular weight, spherical shape and good extensibility, and glutenin with large molecular weight, fibrous shape and strong elasticity. When gluten absorbs water, it forms wet gluten with a network structure, which has good viscoelasticity, extensibility, thermal coagulation, emulsification, and film formability, such as gluten, roasted gluten, mold gluten, ancient gluten in traditional products.
