2-Methyl-2-pentenoic acid is a colorless to light yellow liquid. Boiling point 123 ℃ (4000Pa). It has a sour and sweet fruity aroma, syrup, and woody aroma. Natural products exist in strawberries. It also has fresh strawberry aroma, rich, mellow and lasting flavor, which is used to prepare edible strawberry essence.
