1 – UNIQUE This EVO oil is extracted from a single type of olive, with Unique organoleptic characteristics: the Provenzale. 2 – THE TERRITORY Provenzale is present only on Italian territory, in a small part of the Daunia soil. 3 – PRECIOUS Provenzale is, due to its extraordinary organoleptic properties, among the most prized cultivars in the world. 4 – OF VALUE The Provençal olive has a higher quotation on the market than other types of olives. 5 – INTENSE On average, only about 12 liters of EVO oil are extracted from each quintal of these olives. 6 – THE CARE The harvest of these olives is done on the tree. Without ever touching the ground. 7 – GREEN The milling of our fruit takes place within 18 hours of harvesting. 8 – COLD The extraction of our extra virgin olive oil takes place at a controlled temperature of 24°C*. 9 – REST IN THE COOL The storage of our product takes place in air-conditioned environments H24. 10 – NOT FILTERED Our oil is not filtered but subjected exclusively to natural decanting, by decanting according to a strict conservation protocol. In this way all its organoleptic characteristics are preserved. THE SECRET The oil behind our "Classico" label comes from olives harvested in a particular week of the year.
