Products Description
Redfish caught in Greenlandic waters are generally much fattier than those in the Atlantic Ocean. We select only dressed fish weighing 1kg or more, as larger fish are fattier. We then marinate overnight in salt water and overnight in special sauce based on white miso at our factory in Gifu Prefecture. Relish in the rich fatty taste of redfish from the Greenlandic waters harmoniously combined with the moderate sweetness and richness of the white miso sauce. Redfish caught from the Greenlandic waters weighing over 1kg are sparse in the market, making this product a once-in-a-blue-moon treat.
Major restaurant chains in Hong Kong use our products for their high-end Japanese food departments. Our products continue to be a staple in many restaurants and are exported in quantities of approximately 200-500kg every week.
