Introduction:
The full name of monoglycerides (MG) is monofatty acid glycerides (or glycerol monofatty acid esters), which have two configurations: 1-MG and 2-MG. According to the name of the main fatty acids in Chemicalbook, monoglyceride can be divided into glyceryl monstearate vinegar, glyceryl monophosphorate vinegar, glyceryl monoleate vinegar, etc. Among them, glyceryl monstearate is the most produced and used.
Application:
Food:
1. For candy, chocolate, can prevent milk sugar, toffee oil separation phenomenon; Prevent chocolate sugar crystallization and separation of oil and water, increase delicacy. The reference dosage was 0.2%-0.5%.
2. Used in ice cream, it can make the tissue mixed evenly, the tissue is fine, smooth, expanding activity, and improve the form retention.
3. Used in margarine, can prevent oil and water separation, stratification and other phenomena, improve the quality of products.
