• In some cases, especially in Asia, rice bran oil is usually extracted, but most of this embryo is mixed with bran. This is a process for making the product we want, but it can also be the source of some problems. Along with the oil, the embryo also has an enzyme to oxidize the fat (the first energy supply to the germ before mobilizing starch remotely). The lipoxidases start working as soon as they come into contact with the air, and this problem occurs when the rice embryos are crushed during milling.

If unprotected, whole rice bran (common name) will oxidize rapidly unless the product is consumed within a few days of production.
