STAR ANISE
Star anise is a star-shaped spice that is the dried fruit of the Illicium verum plant. Star anise has a very strong, distinct flavor that is sweet and spicy. Vihaba's Star Anise is grown in Lang Son, the main growing region with the highest quality in Vietnam.

Processing
Step 1: Growing
Star anise requires full sun to partial shade in almost any soil type. It prefers slightly acidic soil and needs consistent moisture, 5-6 years old star anise trees begin to bear fruit but from 20 years onwards will give the highest yield and quality.
Step 2: Harvesting
The fruits of the plant (called star anise) are picked unripe while they are still green. Fresh star anise, which doesn't change the color will be selected. Star anise fruit is located on small branches at the edge.
Step 3: Drying
After being harvested, these fruits need to be dried immediately to ensure the quality. Star anise will be dried naturally under the sun heat or mechanically by stove until their color changes to reddish-brown.
Step 4: Preserving
After drying, star anise is put in a bag, tied tightly to prevent moisture absorption, and stored in a clean, cool place. This also helps to ensure the quality of star anise, avoiding affecting the aroma and flavor of star anise.
