名栗包丁シリーズ (NAGURI knife series)
A series of knives made of SLD steel with NAGURI processing on the handle!
Everything from the blade, handle, and outer box is made in Sanjo, Niigata Prefecture, Japan, making this one of the most massive and particular knives.

This product is a collaboration of Tadafusa Ltd, a kitchen knife manufacturer, Kaneko Sogyo Co., which handles many wooden products, and MURANOKAJIYA.
The three companies are located in Sanjo, a kitchen knife production center that continues to carry on the tradition, cooperated to produce the Naguri kitchen knife.

Santoku knife

This is the most commonly used knife in Japanese households. It is highly versatile and can be used for any kind of cooking,
including meat, fish, and vegetables.

The curved tip makes it easy to cut into meat and fish, The parallel shape near the handle makes it easy to cut vegetables and
other foods.
NAGURI-processed handles
NAGURI is a traditional Japanese technique with a long history, used in Japanese architecture since ancient times, which leaves
uneven shaving marks on the surface of wood
The unique uneven surface fits the hand and is not only visually appealing but also practical.
The handle is made from wenge, which is highly durable. The beautiful grain and black-purple-brown color create a luxury handle.
SLD steel blade
SLD steel is hard, tenacious and abrasion resistant, so it keeps its sharpness even after long periods of use.
For this reason, they are mainly used for high-end knife.
They are popular as household knife that cut well and are rust-resistant.
A special alloy steel containing chrome equivalent to stainless steel and many carbons, molybdenum and vanadium.
Rust-resistant
Unlike carbon steel, this material is extremely rust-resistant.
(It is not totally rust-free and needs to be cared for.)
It is a relatively easy-to-sharpen type of steel and can be used for many years if well cared for.
The village blacksmith’s mark casually engraved on the blade is also a point of interest.
Pearskin finish on blade surface
The surface of the SLD steel has a pear finish.
It has the advantage that fine foodstuffs are less likely to stick to it. It also creates a luxurious appearance.

From the design of the outer box to the manufacturing is also carried out in Sanjo.
The matt-textured outer box is wrapped in a band with a printed uneven pattern of Naguri. The knife is also an ideal gift.

About NAGURI knife

We were able to cooperate with Kaneko Sogyo and Tadafusa, which boast high technology in their respective fields, through our joint participation at Ambiente, one of the world’s largest trade fairs held in Germany.
We want to introduce to the world knife that have been created with great care in Sanjo, both in the blade, handle and outer box!
The production of the Naguri kitchen knife was realised with this aspiration in mind.
When we brought our products at an overseas exhibition, we received a great deal of positive feedback from many people.
We have exported our kitchen knives to several abroad companies, and the unique Japanese design of our kitchen knives has been highly evaluated.
NAGURI Santoku Knife won the Second Prize in the NIIGATA IDS Design Competition 2024 !
IDS is a design competition based on the concept of "the development of products, systems and services for life creation and social evolution, and the utilization of Niigata characteristics".

NAGURI Japanese knife series

Petty knife

A type of Western kitchen knife, it is a smaller version of the Gyuto knife, which is considered an all-purpose, and is
characterized by its pointed tip.
It is suitable for peeling fruits and vegetables, cutting small pieces of food, and making decorative cuts.
The curved blade tip makes it easy to cut into food.
Since it is easy to handle and takes up little space, it is also useful for outdoor cooking.

Nakiri knife

This Japanese knife is specialized for cutting vegetables.
The blade is square in shape, so no matter where you cut, there is no gap between the blade and the cutting board, so there is no worry of leading to uncut pieces.
Therefore, cutting vegetables, dicing, julienne, thin slicing, peeling, and chopping can be done with ease.
Since you can cut a variety of vegetables at once without exerting much effort, having one of these at home will help you make progress in your daily cooking.

Gyuto knife

Gyuto is an all-purpose kitchen knife with a longer blade and a pointed tip than Santoku knives.
It can smoothly cut through large pieces of meat, fish, vegetables, and other foods that are difficult to cut with other knives.
The curved tip of the blade makes it easy to make cuts into meat, fish, and other meat.
