Monoglyceride (MAC), is an important type of nonionic surfactant. It contains a lipophilic long-chain alkyl group and two hydrophilic hydroxyl groups, so it has good surface activity and can be used as an emulsifier in food, cosmetics and other fields. For example, lauric acid monoglyceride has broad-spectrum antibacterial properties, high safety, stable performance, and strong surface activity. It has been industrially produced and put on the market as a food preservative.

At present,
Monoglyceride
is widely used in those products
:
1.
It can be used as a food and fungicide.
It has strong antibacterial activity and a wide antibacterial spectrum. It can be used for the preservation of meat products, dairy products, beer, soy sauce, etc. It can also be used for the preservation of oranges, peaches, lychees and other fruits. Glyceryl monolaurate can form a complex with starch and protein to reduce the antibacterial effect, and is almost ineffective against Gram-negative bacteria. However, it has a good compound effect with other fungicides such as potassium sorbate, so it is often used in compound formulas.
2. Can be used as emulsifier, co-emulsifier, stabilizer and preservative.
It is used as bread softener in food processing, defoaming of soy products, and as emulsifier and stabilizer in dairy products, margarine, and pastries. It is used as a defoaming agent for soy sauce, soy milk and lactic acid beverages; it is also used to prepare cosmetic ointments, creams and lotions, and is used as suppository base .
3. Can be used as emulsifier, co-emulsifier, stabilizer and preservative.
Used as emulsifier for industrial silk oils and lubricant for textiles; used as dripping agent and anti-fogging agent in plastic films; used as lubricant and antistatic agent in plastic processing. It is also used to prepare cosmetic ointments, creams and lotions. In dairy products, margarine, pastries; defoaming agent for soy sauce, soy milk and lactic acid beverages
4. Used in daily chemicals.
HLB>3.7 is the emulsifier of W/O emulsion and is an ideal raw material for cream products.
